Miso Glazed Eggplant (Nasu Dengaku)

Ingredients

  • 1.5 tbsp Meru Miso's Sweet Red Miso (their White Miso and Chickpea Miso also works well in this recipe)
  • 1/2 tsp Chilli Paste
  • 1 tsp Crushed Garlic
  • 1 tsp Rice Malt Syrup
  • 1 tbsp Tamari
  • 1 tbsp Mirin or Sake
  • 1.5 tsp Sesame Oil
  • 2 Japanese Eggplants (or 1 medium eggplant)

To garnish:

  • Sliced spring onions
  • Sesame Seeds
  • Coriander leaves

Method

  1. Heat oven to 180 degrees.
  2. Slice eggplant in half lengthways and make deep cuts in the flesh to make a square pattern - try not to pierce the skin.
  3. Mix all the marinade ingredients together in a bowl.
  4. Place halved eggplants on a baking tray and use half the marinade to coat the eggplant. Make sure you get it right into the grooves.
  5. Bake in the oven for 30 minutes. Remove and spread remaining marinade on top. Bake a further 15 minutes.
  6. Top with garnish and serve with a side of garlic bok choy.
