Here is a simple recipe for a hearty corn soup (that I could eat every day for lunch and dinner!) that makes for a quick, delicious and healthy meal.

Quinoa & Corn Soup


  • 1/2 cup white quinoa
  • 1/2 teaspoon sea salt fine
  • 1 litre liquid vegetable stock
  • 2 tablespoons macadamia oil
  • 1 red capsicum - diced
  • 2 tomatoes - diced
  • 1 small onion - finely diced
  • 1 cup frozen corn kernels


  1. Heat a pot with oil and saute the onion. 
  2. Add the capsicum and tomatoes and stir to soften.
  3. Add the remaining ingredients and cook for 20 minutes until the quinoa is cooked through.
