Easy Black Bean Spaghetti Dinner in Minutes

With the attention on Coeliac Awareness Week, it's a good time to consider gluten free alternatives and this one is pretty unique!

Explore Asian's Black Bean Spaghetti is an interesting change to usual spaghetti, which is high in protein, fibre and iron, plus it is also sodium free. It also has a great texture that holds it's shape well with boiling.

This is a quick vegan recipe which is gluten and dairy free.

 

Black Bean Spaghetti Recipe

Ingredients

  • 1 pack of Explore Asian Black Bean Spaghetti
  • 1 container of heirloom tomatoes diced
  • A splash of olive oil
  • Ribbons of fresh basil
  • 1 tbs of minced garlic
  • A pinch of salt and red chilli flakes

Method

  1. Cook the Black Bean Spaghetti for 7-8 minutes (follow instructions on pack)
  2. Whilst the spaghetti is cooking, in a bowl mix the tomatoes, basil, garlic, olive oil, sea salt and chilli flakes together.
  3. Once the spaghetti is cooked, rinse under cold water and drain.
  4. Plate and serve with tomato basil sauce on top!

Serves 4.
