Here is a simple recipe for a hearty corn soup (that I could eat every day for lunch and dinner!) that makes for a quick, delicious and healthy meal.
Quinoa & Corn Soup
Ingredients
- 1/2 cup white quinoa
- 1/2 teaspoon sea salt fine
- 1 litre liquid vegetable stock
- 2 tablespoons macadamia oil
- 1 red capsicum - diced
- 2 tomatoes - diced
- 1 small onion - finely diced
- 1 cup frozen corn kernels
Method
- Heat a pot with oil and saute the onion.
- Add the capsicum and tomatoes and stir to soften.
- Add the remaining ingredients and cook for 20 minutes until the quinoa is cooked through.
